Even traditional stew lovers will be impressed with this super healthy vegan mushroom stew that’s not at all fattening. Try it yourself!
- 500 g champignon mushrooms
- 2 onions
- 1-2 cloves garlic
- 1 carrot
- 150 ml tomato juice
- 1 handful parsley
- salt and pepper
- 1 tbsp sweet paprika
- 2-3 tbsp olive oil
Chop the onion, grate the carrot and sauté them, then add the chopped garlic.
Once the onion is translucent, add the cleaned mushrooms cut lengthwise.
Add the spices and tomato juice, then leave the stew on a low heat for about 10 minutes to allow all the flavours to meld.
Finally add the parsley and serve the stew with your favourite side dish.
